Baked Cod with Mashed Sweet Potatoes

Cod is a remarkably mild, lean white fish that won’t weigh you down. Sweet potatoes provide a great nutrient boost, but the key is removing the skins to eliminate the insoluble fiber.

  1. Preheat your oven to 400°F (200°C).

  2. Place cod fillets on a baking tray, brush with a tiny bit of olive oil and salt, and bake for 10-12 minutes until completely opaque.

  3. Peel the sweet potatoes entirely and chop them into small cubes. Boil until completely tender (about 15-20 minutes).

  4. Drain and mash them with a fork, stirring in a small amount of olive oil and salt.
