Ground Chicken & Zucchini Skillet

Zucchini is a fantastic vegetable for Crohn’s, as long as it is peeled and cooked until it is completely soft.

  1. Peel the zucchini to remove all the dark green skin, then dice it into small cubes.

  2. In a skillet over medium heat, add a splash of olive oil and brown the ground chicken.

  3. Add the peeled zucchini cubes and cook until the chicken is done and the zucchini is practically melting into the pan. Season simply with salt.

  4. Serve this warm skillet mix alongside couscous or leftover white rice.
